Hi Inacio - welcome to the forum.
The short answer is that it can't currently be done natively within Rainmeter, but people are looking at it. Check out this thread for the state of play.
You can get somewhere near what you're talking about with a programme called Speedfan, which is linked at the bottom of the forum frontpage, and then Rainmeter skins (like this one for fan speed and the one referenced here for temps) that read the output from Speedfan. I don't think that will do GPU, though I could be wrong.
Your other alternative is to get in touch with Tanj and see if he'll share what he developed and posted on this thread, which seems to cover everything that you're after.
